FOOD FACT


ARROWROOT- The roots of the maranta plant that is ground and mixed with water and dried.  It is then reduced to a fine white powder .  Arrowroot can be substitued for flour, but only half as much should be used.  Unlike cornstarch, it does not cloud clear liquids or alter their taste(if cooked briefly).  It is a low protein food for people with liver or kidney problems or with certain allergies.
